  • 2 cups pumpkin puree canned or homemade
  • 1 cup heavy cream
  • 3 cloves garlic minced
  • 1/4 teaspoon nutmeg freshly grated if possible

  • 2 tablespoons butter

Method
 

  1. Bring a large pot of salted water to a rolling boil, then add your pasta and cook until just al dente, about 8 minutes. Drain and set aside.
  2. In a pan, melt the butter over medium heat and add the minced garlic. Sauté until fragrant, about 1 minute, until the garlic becomes aromatic and slightly golden.
  3. Stir in the pumpkin puree and heavy cream, whisking to combine. Add a pinch of freshly grated nutmeg, then simmer gently for 5 minutes, stirring occasionally until the sauce is warmed through and slightly thickened.
  4. Add the cooked pasta to the sauce, tossing gently with a wooden spoon until evenly coated. Cook together for another 2 minutes, allowing the flavors to meld and the sauce to cling nicely to the noodles.
  5. Stir in the grated Parmesan cheese and chopped herbs, mixing until the cheese melts smoothly into the sauce. Taste and adjust seasoning if needed.
