Ingredients
  

  • 2 cups fresh pineapple chunks ripe and juicy
  • 8 leaves fresh mint leaves preferably bright and fragrant
  • 1 tablespoon lime juice optional, for brightness
  • 1-2 teaspoons honey or agave syrup optional, to taste
  • 1/2 cup water or coconut water to thin the mixture if needed

  • Silicone molds or paper cups

Method
 

  1. Place the pineapple chunks and mint leaves into the blender.
  2. Blend on high until the mixture is completely smooth and vibrant yellow-green in color, about 30 seconds.
  3. Add lime juice and honey or agave syrup to the blender, then pulse briefly to incorporate. Taste and adjust sweetness if desired.
  4. If the mixture seems thick, pour in water or coconut water to thin it slightly, then blend again until smooth.
  5. Pour the mixture into silicone molds or paper cups, filling each about three-quarters full.
  6. Insert wooden sticks into each mold or cup, then cover with plastic wrap if necessary to prevent spills.
  7. Place the molds in the freezer and freeze for at least 4 hours, preferably overnight, until completely firm and solid.
  8. Once frozen, run warm water briefly over the molds to loosen the popsicles, then gently pull them out or peel away the cups.
  9. Serve immediately, enjoying the crunchy exterior and creamy, icy interior with a burst of tropical flavor and cooling mint aroma.

Notes

For extra flavor, add a pinch of chili powder or a splash of ginger to the mixture before freezing.
