Ingredients
  

  • 1 sheet puff pastry puff pastry store-bought or homemade, keep cold
  • ¾ cup cranberry sauce cranberry sauce preferably whole berries
  • 8 ounces brie cheese soft, room temperature
  • 1 teaspoon fresh thyme fresh thyme chopped, optional
  • ¼ cup chopped nuts nuts toasted pecans or walnuts, optional

Method
 

  1. Preheat your oven to 190°C (375°F). Line a baking sheet with parchment paper to prevent sticking.
  2. Unfold the puff pastry sheet onto a lightly floured surface and cut it into 24 small squares, about 2 inches each, using a sharp knife.
  3. Place each pastry square on the prepared baking sheet. Use the back of a small spoon to dollop a teaspoon of cranberry sauce in the center of each square. This creates a colorful, tart pool that will burst with flavor.
  4. Slice the brie cheese into tiny cubes, about half an inch, and gently press one piece onto each cranberry dollop. This helps the cheese melt evenly and creates a creamy topping once baked.
  5. Bake in the preheated oven for about 15 minutes, or until the pastry is golden brown and puffed, and the cheese is bubbling and soft.
  6. Remove from the oven and let the bites sit for 5 minutes. This resting period allows the cheese to set slightly and makes handling easier.
  7. If desired, sprinkle with chopped nuts or fresh thyme for added texture and flavor. Serve warm and enjoy the delightful combination of crisp pastry, creamy cheese, and tangy cranberry.

Notes
